Last year I took a pastry class at the French Pastry School in Chicago. With the techniques I learned there, plus from what I learned from my part time job at a nice pastry shop here in NH, I decided to be adventurous and make gum paste bouquets for the guests at the baptism. One per family I should clarify since the time and work making these bouquets is pretty significant.
I managed to complete the bouquets the night before the baptism. I worked hard for days but was very happy at how they came out. Eli helped a lot as you can imagine and I had to give her some playdo so she could make her own flowers.
